It's Greek to Me [Greek Salad Lettuce Wraps]

Not quite Greek salad, not fully lettuce wrap. Taco-like in form, yet significantly healthier. I introduce to you, the Greek Salad Lettuce Wrap. Crunchy, filling, easy fun. No cooking required. Chop up a few cucumbers and cherry tomatoes, sprinkle on some feta (and even a little fresh dill if you're feelin' fancy...) and you have an incredibly easy meal.

Fill 'er up

I also added some hummus as my "glue" to hold the fillings in place. Because, well, hummus makes the world a better place. There's no real recipe for this, though I'll say that three large romaine leaves with all the fixins' did the trick in terms of filling me up. And I chopping up about half of cup each of cherry tomatoes and cucumbers to feed another adult...and had plenty left over. Feta and hummus is per your own discretion—and I won't judge if you eat the whole container.
