PBBDS (Peanut Butter Banana Date Shake)

I'm obsessed with Peanut Butter & Banana Smoothies. Usually I just add a frozen banana, a tablespoon of peanut butter and enough almond milk to help it blend. But I decided to add a little pizazz to my shake in the form of dates, chia seeds and coconut flakes. Dates are full of fiber...and happen to be sitting all lonely in my fridge. They're great for naturally sweeting foods. I've recently began putting them in my oatmeal. The chia seeds are also great for fiber (by now you must sense a trend that I don't eat a lot of fiber) and the coconut flakes are just yummy.

to make, you'll need:

1 large pitted medjool date

3/4 cup of almond milk (rough estimate)

1 large frozen banana

1 tablespoon of peanut butter (I like creamy/salted/organic from Trader Joe's)

1 tablespoon of chia seeds

a sprinkling of toasted coconut flakes

I just throw everything, except the coconut flakes (although you could) into a my Magic Bullet to blend, but use any sort of blender. Top with coconut flakes once smooth an creamy. No ice needed because of the frozen banana.
