Lobstah! [One-bite "Lobster Roll" Canapés]

Earlier this week, all I really wanted was a lobster roll. Like REALLY wanted one. But what's a lobster roll without the roll? And most GF rolls and buns just don't do it for me. Our favorite little market has delicious lobster salad so I was covered on that front...so time to get a little creative with the "roll" part.

We happen to have these awesome little chip-cracker hybrid things already at home, so I decide to make little canapés (I mean, may as well add a little excitement to my Tuesday with a fancy one-bite lobster appetizer!). I also sliced up an avocado and added that to the one-biter. They look super impressive, but took about 30 seconds to assemble. And about that long to eat.

you'll need..

12-ish (sturdy) crackers like these or these

1 small avocado, sliced thin (at least 12 pieces, 6 from each half)

1/3 pound of lobster salad...or more ;)

1/4 of a red bell pepper, very thinly sliced (optional)

to make...

Order is crucial for the assembly: cracker, avocado, lobster salad, pepper. You only need a little bit of salad on each cracker. Don't get all greedy and over-lobster your cracker. Things will get messy. Take it easy. Be a civilized canapé creator. Assemble, marvel, devourer.
