Chi-Chi-Chia

To call this a recipe is almost not fair—it's that simple. This is a great breakfast (or snack) for anyone that doesn't enjoy making (or eating) either. That's clearly not my case...ever...but when I am in the mood for something simple yet filling, this is it.

Chia seeds, if you aren't familiar with them, are considered a "superfood" because they are very nutrient-dense and filled with protein and fiber, which is great for vegetarians (and they are GF).

To prepare, I'd recommend using almond or coconut milk, but any type of milk could work. To sweeten, I usually add pure maple syrup and top with fresh fruit. Honey and agave work too, or sweeten with jam. Bon appétit :) you'll need... 3 tablespoons of chia seeds 1/2 cup of almond milk 1 teaspoon of maple syrup 1/2 peach or nectarine, 1/4 cup of sliced strawberries, OR a handful of blueberries (you can also jazz this up with granola, sliced almonds or pumpkin seeds) to make... Stir chia seeds and almond milk together in small mason jar, glass or bowl. Add in maple syrup and stir again for about a minute. Mixture will begin to thicken. Refrigerate overnight, or at least 4 hours, and top with fresh fruit. This recipe easily doubles and will stay for a day or two. It's also a great way to enjoy summer fruit. That's it! See? So easy!
