Fridge Foraging [Zucchini & Egg "Breakfast" Taco]

Things got weird last night. And delicious. But mainly weird. Let me back track a little: if there's one thing I'm good at, it's what I like to call "fridge foraging"—some Danish chefs made foraging cool a couple years ago, but I've made it realistic for any time-pressed New Yorker. "What is Fridge Foraging?" you ask. Well, simply put, it's when you turn the random contents of your fridges into a meal. Otherwise known as MAGIC!

At 8:47 pm, I still wasn't sure what was for dinner (god forbid I skip a meal). Tonight we had some zucchini (not surprising—read about my affinity for seasonal zucchini here), eggs, corn tortillas, and an onion purchased weeks ago and sadly forgotten about. Clearly, CLEARLY, Zucchini & Egg Breakfast Tacos were the answer. Is this weird combination even a thing??? Well, now it is. Not only was it delicious, but I think René Redzepi would approve.
you'll need...
1 medium zucchini, julienned or spiralized (I kept it "old school" tonight with my Titan Peeler. Got to love those infomercials!)
2 eggs
2 corn tortillas (really enjoying these from Hot Bread Kitchen—the tortillas & the company)
1/4 of a large onion, sliced into rings
2 tablespoons (or more) of salsa
2 teaspoons of olive oil, divided
1 pat of butter (or, whatever your preference is for frying eggs)
salt & pepper to taste

In a small frying pan, sauté zucchini in one teaspoon of olive oil over medium-low heat until slightly softened. Season with salt & pepper, set aside. In the same pan, brown (but don't burn) the onion. Add the other teaspoon of olive oil if needed. Remove from heat once softened and nicely browned. In the same pan, fry up 2 eggs. I recommend over easy so the yolks don't break before they make their way into the tortilla. While the eggs cook, heat up corn tortillas. I (very carefully) held it over the stove using tongs, but I'd actually recommend a dry, flat pan. Just warm them a bit so they fold up nicely. Once eggs are cooked and tortillas are warmed, layer your taco in this order (assembly is key): tortilla, egg, zucchini (about half), a few rings of onion, 1 tablespoon of salsa. If you're feeling WILD you can also add some shredded cheese. That's the beauty of fridge forging—it's sort of like roulette and you just really never know what's going to turn into dinner. Then just fold, hold & eat. Olé!
