A Better Breakfast in 60 Seconds [Overnight Oats]

Sixty seconds is almost an exaggeration. If you have an extra minute before bed, you can enjoy a lovely, wholesome breakfast every single morning. Yes. I swear. It's true.

Overnight Oats

While overnight oats are not for everyone (consistency, cold vs. hot, not THAT exciting), they are definitely filling, good for you, expensive and easy to prepare. And did I mention that they only take a minute (maybe) to make?

you'll need...

1/2 cup of rolled oats (I really enjoy Trader Joe's Gluten Free Rolled Oats)

3/4 cup of almond milk

1 tablespoon of chia seeds (optional, if you don't have an extra 10 seconds)

1 teaspoon of honey or maple syrup (or try jam if you don't have fresh fruit on hand)

1/4 cup of fresh or dried fruit (optional -- I love dried figs (soak overnight in oatmeal), fresh peaches, sliced strawberries, blueberries or 1/2 a banana)

to make...

Combine oats, almond milk, maple syrup and chia seeds (if using) in mason jar (or anything with a lid). Stir or shake well to mix. Place in fridge, go to bed, awaken to homemade hearty breakfast, top with fruit, enjoy a great morning.
